That’s exactly how this Cajun Chicken Alfredo Pasta Bake came to be.

We had a package of chicken in the refrigerator that needed to be cooked, but neither of us had a clue what we wanted for dinner. After a quick look through the pantry, we realized we already had almost everything we needed: one lonely jar of Alfredo sauce, a box of rigatoni, a little heavy cream, some milk, and plenty of cheese.

Instead of making another ordinary pasta dinner, we decided to turn it into something that tasted like it came from our favorite local restaurant.

To give it some personality, we seasoned the chicken generously with Cajun seasoning before cooking it. We seared it in a hot cast iron skillet for about 3 to 4 minutes per side until it developed a beautiful golden-brown crust. Since the oven was already preheated to 375°F for the pasta bake, we simply transferred the skillet to the oven and let the chicken finish cooking until it reached a safe internal temperature of 165°F. The chicken turned out incredibly juicy and flavorful, and we sliced it right into the casserole.

Then we took it one step further.

We added another sprinkle of Cajun seasoning directly into the Alfredo sauce mixture so every bite had just the right amount of bold, smoky flavor. It gave the entire dish a restaurant-quality taste without being overly spicy. Even our son happily cleaned his plate, which is always the best review a family recipe can get.

A Budget-Friendly Family Dinner

One of my favorite things about this recipe is how budget-friendly it is. We only had one jar of Alfredo sauce, so instead of running back to the grocery store, we stretched it with heavy cream, a splash of milk, and just a little reserved pasta water. I honestly wasn’t sure how it would turn out, but it baked up perfectly creamy and stayed that way from the first serving to the leftovers.

The crispy buttery topping was another pleasant surprise. I have a habit of drying out breadcrumb toppings, but this one stayed perfectly crisp while the pasta underneath remained rich and creamy.

Don’t have fresh chicken that needs to be used? No problem. A couple cans of chicken work wonderfully too, making this an even more affordable weeknight meal without sacrificing flavor.

Make It Your Own

This recipe is also incredibly flexible. We happened to have a box of rigatoni sitting in the pantry, and it was perfect for holding all that creamy sauce, but honestly just about any pasta shape would work. Penne, rotini, ziti, shells—whatever you already have on hand can become dinner.

Ingredients
  

  • 16 oz Pasta any kind
  • 2 cups Cooked Chicken shredded or diced (rotisserie and canned works great)
  • 2 15 oz jars Alfredo Sauce
  • 1 cup Heavy Cream
  • 1 1/2 tsp Garlic Powder
  • 1 1/2 tsp Cajun Seasoning
  • 1 tsp Onion Powder
  • 1 tsp Italian Seasoning
  • 1/2 tsp Black Pepper
  • 1/4 tsp Salt
  • 1 1/2 cups Shredded Mozzarella Cheese
  • 1 cup Freshly Grated Parmesan Cheese

Method
 

  1. Preheat your oven to 375°F. Grease a 9×13-inch baking dish
  2. Cook the pasta until 1-2 minutes shy of al dente. Drain.
  3. In a large bowl, combine: Alfredo sauce, Heavy cream, Cajun seasoning, Garlic powder, Onion powder, Italian seasoning, Pepper, Salt (if needed)
  4. Stir in: Cooked chicken, Pasta, Mozzarella, Parmesan, any other optional add ins like Broccoli or Mushrooms
  5. Pour into the prepared baking dish
  6. Mix together the melted butter, panko, Parmesan, Italian seasoning, and garlic powder. Sprinkle evenly over the casserole
  7. Bake uncovered for 25-30 minutes, until hot and bubbly
  8. Broil for 1-2 minutes if you'd like the topping extra golden
  9. Let rest for 5-10 minutes before serving
  10. Garnish with parsley and extra Parmesan

Notes

Only have one jar of Alfredo Sauce? No problem just do the following:
Continue following Step 3 but only add your 1 jar of Alfredo Sauce and add 1 cup heavy cream (or 1 cup half-and-half) and a ½ cup milk to the Step 3 mixture.
 
If you have raw chicken you need to use up:
Then season the chicken with the same spices listed in the recipe and sear in a cast iron pan until golden brown on both sides (about 4-5 minutes each side) then transfer to your already preheated oven until the chicken reaches a safe internal temperature of 165 degrees F. about 10 minutes depending on thickness of chicken.
